Vegan Black Bean Soupe

Ingredients:

  • 1 tbl cooking oil

  • 1 medium  onion (diced)

  • 2 Tbl La Soupe Moroccan Spice Blend

  • 2 peppers diced, yellow and red

  • 2 16- oz canned, low-sodium black beans (undrained)

  • 1 15- oz canned, no-salt-added, diced tomatoes (undrained)

  • 1 cup low-sodium vegetable broth (made from your kitchen scraps! #nowaste)

  • chopped, fresh cilantro

  • fresh lime for garnish

Directions:

  1. In a soup pot on medium-high heat add oil, onion and cook until translucent (5 minutes).

  2. Add spices and peppers and cook 1 minute.

  3. Add beans to the pot and lightly mash with a potato masher or fork.

  4. Add tomatoes and broth. Bring to a boil, reduce to medium heat, cover, and simmer for 15 minutes.  

  5. Serve topped with chopped fresh cilantro. Optional: Make it a meal by adding baked diced chicken and serving over brown rice.
