Vegan Black Bean Soupe
Ingredients:
1 tbl cooking oil
1 medium onion (diced)
2 Tbl La Soupe Moroccan Spice Blend
2 peppers diced, yellow and red
2 16- oz canned, low-sodium black beans (undrained)
1 15- oz canned, no-salt-added, diced tomatoes (undrained)
1 cup low-sodium vegetable broth (made from your kitchen scraps! #nowaste)
chopped, fresh cilantro
fresh lime for garnish
Directions:
In a soup pot on medium-high heat add oil, onion and cook until translucent (5 minutes).
Add spices and peppers and cook 1 minute.
Add beans to the pot and lightly mash with a potato masher or fork.
Add tomatoes and broth. Bring to a boil, reduce to medium heat, cover, and simmer for 15 minutes.
Serve topped with chopped fresh cilantro. Optional: Make it a meal by adding baked diced chicken and serving over brown rice.
